How to react if you are stumped by a question during an interview?

You have been preparing for an interview and practised a lot of the questions that may be asked by the potential employer. On the day, the interview started off great but then the interviewer started asking your experience with the former employer and why you left your previous job. Your mind is frozen at that point, what should you do?
